Trying Viral Recipes

The trend we love to hate


I don’t have tik tok. Should I get it? I think I may be too old. Just like Snapchat or twitter, I never latched on to these new apps. I do however have Instagram.


I know that tik tok is now a huge database for people to get inspiration for recipes. Not sure how I feel about that, but the world is changing. I have to get used to it and adapt.


So like the rest of the world I saw a recipe online and tried it. As much as I hate to admit when others are right…it was really good. I hated the fact that I liked it. I would have much rather used a cookbook, but I tried something new.


I did add a few items to the recipe that were not originally there, but it didn’t make a difference. I was trying to use up some old ingredients in my fridge. This just goes to show you that online recipes can be altered as much as ones that have been added to cookbooks.


So here it is…Chicken Tortellini Soup. It was healthy and yummy and lasted for 5 days of dinner for 2 hungry cooks. You don’t have to scroll through 5 pages to get to the recipe. Here it is!



Chicken Tortellini Soup

2 chicken breasts, diced

3 pieces, leftover salami

350 g tortellini

1 tetra pack chicken stock

2 carrots, washed, unpeeled, chopped into dice

4 celery stalks, chopped in small dice

1 onion, chopped into small dice

1 red pepper, diced

3 cloves garlic, finely chopped

1 can chopped tomatoes

250ml 35% cream

2 handfuls spinach

1 handful shaved Parmesan

100ml olive oil (to start and finish)

30g dried thyme and rosemary

2 bay leaves

Salt and pepper to taste


Directions

  1. Sautée vegetables in a medium to large size pot with some oil

  2. Once the vegetables are cooked down, add chicken to brown

  3. Add to the pot the tomatoes, stock and spices

  4. Once the soup comes to a boil, turn down the temperature to simmer and cook until the chicken becomes tender

  5. Add the cream and spinach as well as the tortellini

  6. Once the pasta is in the pot, it will take between 10 to 15 minutes to finish (watch out that the pasta does not overcook)

  7. The consistency should be think but still soup like

  8. Once the soup is done, serve it in a b owl with a splash of oil, cracked black pepper and shaved Parmesan
